
Chocolate mousse cake with mirror glaze

1. To prepare the mousse, in a deep bowl combine the cream with sour cream and start whipping, adding powdered sugar to taste.

2. Soak the gelatin in milk and leave for about 10 minutes. If necessary, you can warm it slightly.

3. Melt the chocolate in the microwave or using a double boiler.

4. It should dissolve completely. Only then stir gently.

5. Drain the gelatin in a colander to remove excess milk. Add it to the mousse.

7. Beat everything until smooth, making sure there are no lumps. Pour the mousse into a mold and refrigerate for 2-3 hours to set.

8. To make a mirror glaze, soak the gelatin in a small amount of water. In a saucepan, combine sugar and water, then place over heat. The syrup should come to a boil.

9. Add cocoa and mix. Warm the cream separately.

10. Pour the hot cream into the chocolate syrup, continuing to stir. Drain the gelatin in a sieve, as in the first step.

11. Remove the saucepan from the heat and add the gelatin. Stir thoroughly. To avoid sugar crystals or gelatin lumps, strain the glaze through a fine sieve.
