
Chocolate mousse with cognac

1. Heat the chocolate over a water bath. Now pour a little cognac into the melted chocolate and mix. Cognac is best suited for this recipe, as using another alcoholic beverage may cause the chocolate to "curdle."

2. Remove the melted chocolate from the heat and add the egg yolk to it, then beat the mixture thoroughly.

3. Let the chocolate mixture cool slightly. Whip the cream to stiff peaks and carefully fold it into the chocolate mixture. Be careful—whipped cream can deflate if the chocolate mixture hasn't cooled enough.

4. Beat the egg white and gently add it to the chocolate mixture in two batches. Mix the mousse in a clockwise motion, moving from the edges toward the center. Do not use a whisk! Transfer the chocolate mousse into the serving dishes. Refrigerate for three to four hours.

5. Before serving the mousse, decorate with powdered sugar, chocolate shavings, or whipped cream.
