
Chocolate cheesecake at home
Description
For the cheesecake, choose full‑fat cottage cheese. In consistency it should be slightly denser than soft cream cheese. In such cottage cheese we do not add butter; cream is enough. If you used dry, low‑fat cottage cheese, you will need to add 100 g of butter to the cheese mixture. It can be served with tea or coffee.

Prepare the ingredients.

Prepare chocolate glaze. In a saucepan, add cocoa powder and 0.5 cup of sugar.

Add the milk and butter. Place over low heat and, stirring continuously, heat until all ingredients are fully dissolved. The glaze consistency should be uniform.

Grind the cookies into crumbs. Add the yolk and 2 tbsp of cream. If your cookies aren’t chocolate, add another tablespoon of cocoa powder. Mix everything.

Spread the crumbs into a silicone mold, distribute them over the bottom and press them down.

Prepare the cottage cheese mixture. Put the cottage cheese in a bowl and add the eggs. One yolk was used for the first layer, so we add three eggs and the remaining egg white to the cottage cheese.

Add the remaining sugar and a little flour.

Next, add a quarter of the prepared chocolate glaze and the remaining cream. Blend everything with a blender until smooth.

Pour the cottage cheese mixture into a pan over chocolate crumbs. Place it in the oven for 45–50 minutes. Bake first at 180 °C, then lower the temperature to 160–170 °C.

Let the baked item cool and transfer it from the pan to a plate.
