Description
Delicious baked treat for the whole family. The cheesecake has a very delicate, creamy texture. It should be served and sliced straight from the freezer, using a sharp knife. Do not keep it in the freezer for more than an hour, as it will become too hard, start to separate, and lose its tenderness. Serve it warm or chilled. Perfect with tea.

Prepare the ingredients.

In a blender, pulse the cookies into crumbs. Add melted butter and 2 tablespoons of chocolate syrup, then blend again. The mixture should resemble wet sand.

Line the bottom of a springform pan with parchment paper. Add the cookie mixture and press it down firmly. Chill in the refrigerator for 15 minutes.

The cream cheese must be at room temperature. Beat the cheese with 4 tablespoons of powdered sugar until fluffy and smooth.

Melt the dark chocolate. It's convenient to do this using a microwave. Heat the chocolate in short 10-second bursts, stirring after each heating. Usually, 20–25 seconds is enough for a standard chocolate bar. Pour the melted chocolate into the cream cheese and beat everything together.

Whip thick cold cream to stiff peaks separately, adding the remaining powdered sugar, chocolate syrup, and 2 tablespoons of cocoa powder. Gently fold one-third of the whipped cream into the cream cheese with light motions.

Take the pan with the base out of the refrigerator and spread the cream cheese in an even layer. Place in the freezer for half an hour.

Remove the cheesecake and cover with a layer of whipped chocolate cream. Freeze for another half hour.

Serve the cheesecake immediately, well chilled. Before serving, dust the cheesecake with the remaining cocoa powder and decorate with chocolate and fresh berries.
