
Chocolate sponge roll
Description
Tasty baked goods for the whole family. This roll will become the centerpiece of any festive table. If you can't find mascarpone, replace it with another cream cheese or ricotta. Instead of powdered sugar for the cream, you can use a bar of white chocolate. Melt it in a bain‑marie and combine it with the cheese. Prepare all the necessary ingredients.

Let's start by preparing the decoration (since it will need to be placed in the refrigerator for 30–40 minutes). Melt most of the chocolate in a double boiler, leaving some solid.

Then add the solid pieces to the melted chocolate and stir until dissolved. That's how we get a mass of the right consistency.

Spread the mixture onto parchment for baking.

Roll the parchment with chocolate into a log and place it in the refrigerator for 30–40 minutes, or until the moment we need it.

Let's make a sponge cake. Separate the eggs into whites and yolks. Also divide the sugar in half.

Whisk the egg whites until soft peaks form, gradually add half of the sugar, and whisk until firm peaks form.

Remove the hot, finished sponge cake from the baking sheet.

Carefully roll the roulade together with the paper.

While the roulade cools, prepare the cream. Whip the cold cream.
