Chocolate bar with caramel
Description
First, you need to bake the base (cookies). Prepare the dough in a bowl or food processor, then cut it into strips of desired width and length, bake, and cool. Prepare the caramel using milk, sugar, and butter. As it cools, the caramel thickens, becoming similar to toffee or caramels. Coat the bars with chocolate glaze or melted chocolate. Decorate as desired. More details in the recipe.
Instructions
- 1
Step 1

Prepare the necessary ingredients, let's get started!
- 2
Step 2

First, you need to prepare the base for the bars. Mix the flour with sugar and a pinch of salt.
- 3
Step 3

Add the cold butter and mix it with the flour using a fork or knife until small crumbs form.
- 4
Step 4

The mixture should look like this.
- 5
Step 5

Add egg yolks and sour cream.
- 6
Step 6

Combine all the ingredients to form a firm dough ball.
- 7
Step 7

Roll out the dough and cut it into 20-25 thin strips, 1.5-2 cm wide. Place them on parchment paper and refrigerate for 30 minutes. Meanwhile, preheat the oven to 180 degrees.
- 8
Step 8

Bake the cookies for 15 minutes. Let cool.
- 9
Step 9

Now prepare caramel from milk and sugar with the addition of butter. Pour 300 ml of milk (preferably homemade, full-fat) into a saucepan, and add sugar. Place over medium heat.
- 10
Step 10

Boil the caramel for 25-30 minutes, until the mixture turns a beautiful golden color and thickens. Stir regularly and do not leave it unattended, as the caramel rises significantly during boiling and may boil over.
- 11
Step 11

Remove from heat, add 50-60 grams of butter. Stir until the butter is fully incorporated into the caramel.
- 12
Step 12

Done! The hot caramel needs to be slightly cooled, but not completely, otherwise it will be difficult to spread later.
- 13
Step 13

Brush the cookies well with caramel and let cool.
- 14
Step 14

Melt two chocolate bars (you can use any kind you prefer; I used dark chocolate), then use a silicone brush to coat the bars with chocolate or simply dip them into the melted chocolate. You can either chill the leftover chocolate for another recipe or transfer it into a piping bag and drizzle it over the bars for decoration.
- 15
Step 15

Cool the bars and enjoy!
- 16
Step 16

Serve at the table.
