
Chocolate truffles with cinnamon and coffee

1. Chop the chocolate as finely as possible. Place the chopped chocolate into a bowl.

2. Heat the cream in a small saucepan until bubbles begin to form around the edges. Do not bring to a boil. Pour the hot cream over the chocolate in a bowl and let it stand for several minutes until the chocolate melts.

3. Add vanilla extract, cinnamon, cayenne pepper, and coffee (or coffee liqueur). Beat all ingredients together until smooth.

4. If there are still pieces of unmelted chocolate in the mixture, place the bowl in the microwave for 10 seconds, then stir again. Repeat this until your mixture becomes smooth. Let the mixture stand at room temperature for 1 hour.

5. Using a small spoon, shape into small balls and place them in the refrigerator for 30 minutes to firm up.

6. Take the truffles out of the refrigerator and carefully roll them in any coating of your choice (powdered sugar, cocoa powder, shredded coconut, etc.).
