
Quick Chocolate Truffles

1. Pour the cocoa powder into a bowl. Finely chop the chocolate and place it in another bowl. Bring the cream to a boil in a small saucepan. Choose a saucepan with a thick bottom to prevent the cream from scorching.

2. Pour the hot cream over the chocolate and stir with a wooden spoon.

3. Then whisk in a circular motion, starting from the center and continuing to the edges, until a smooth, homogeneous mixture is obtained. Let it stand at room temperature until it thickens enough to hold its shape, about 1 hour. Then, using a pastry bag, form balls approximately 2 cm in height and 2.5 cm in width. Place them on a baking sheet lined with parchment paper. Freeze in the freezer for 15 minutes.

4. Meanwhile, melt about 90 g of chocolate and use it to coat your hands (use gloves). Gently smooth the cooled truffles with chocolate-coated hands.

5. Roll the truffles in cocoa powder, using a fork for convenience.

6. Place the truffles in a sieve to remove excess cocoa. Store the truffles in the refrigerator.
