
Chocolate gingerbread cookies with kefir
Description
The bake comes together simply and quickly. For a rich chocolate flavor in your spice cookies, use alkalized (Dutch-process) cocoa. You can make the cookies any size or shape. The dough does not have to be rolled only into balls—you can roll it out on the table and cut it out with a cookie cutter. When the bake is done, serve it at the table.

To make gingerbread, prepare the ingredients you need. Sift the flour ahead of time through a sieve to aerate it.

In a bowl, combine the egg with the sugar and whisk lightly. The mixture will turn pale.

Next, stir in the vegetable oil and cocoa.

Then mix in the kefir with the baking soda.

Add a pinch of vanilla. Gradually add the flour and knead the dough. You may need a little more or less flour than the recipe states. Judge by the consistency of the dough.

The finished dough is soft, pliable, and does not stick to your hands.

Shape the dough into balls, flatten them slightly with your hand, and place them on a baking sheet lined with parchment paper.

Sprinkle confectioners’ sugar on top. Bake in the oven at about 180°C for approximately 20 minutes. Adjust according to your oven.

The finished gingerbread will puff up a little. Small cracks will form on top. Take them out of the oven and let cool.
