
Chocolate pastries with salt
Description

1. Preheat the oven to 175 degrees. Place two large sheets of foil in a square metal baking pan, letting the edges overhang. Spray the foil with cooking spray or grease with butter.

2. Finely chop the chocolate. Melt the butter with the chocolate over very low heat, stirring occasionally. Remove from heat. Stir well.

3. Add cocoa, sugar, eggs, vanilla extract, and flour.

4. Pour the batter into the prepared pan and smooth the surface with a rubber spatula. Evenly sprinkle the batter with sea salt. Using a butter knife, spread the salt over the dough.

5. Bake for about 35 minutes, until the edges are firm enough to allow removal of the pie from the pan, while the center remains soft. Test for doneness with a toothpick—when inserted into the center, it should come out with a few moist crumbs. Cool at room temperature in the pan for about an hour. Remove from the pan and peel off the foil. Cut into 12 or 16 squares and serve.
