
Chocolate ginger cookies
Description
The dish is prepared without unnecessary complications. If you want to make the pastries more spicy, increase the amount of ground and fresh ginger in the recipe. The finished dessert can be served at the table.

1. Preheat the oven to 160 degrees with the rack in the center. Line a 22-cm round baking pan with aluminum foil, grease the foil with butter, and place the pan on a baking sheet. Peel fresh ginger and finely chop it. Coarsely chop the chocolate. In a bowl, mix together the flour, salt, and ground ginger. In another bowl, combine the chopped fresh ginger and 1 1/2 tablespoons of sugar, stir well, and set aside. You can prepare the ginger mixture a few days in advance, cover the bowl with plastic wrap, and refrigerate.

2. Melt the chocolate in a bowl set over a saucepan of boiling water, or melt the chocolate in a microwave. Cool. In a large bowl, beat the butter with a mixer at medium speed until creamy. Add the corn syrup, then the remaining 1 cup of sugar, and continue beating for another 2 minutes. Add the vanilla extract and beat. Add the eggs one at a time, beating at medium speed for 1 minute after each addition. Reduce the mixer speed and add the candied ginger, beating for 1 minute. Then add the dry ingredients and beat until combined. Add the melted chocolate and stir thoroughly with a rubber spatula.

3. Place the dough into the prepared pan. Bake for 30 to 35 minutes. Cool to room temperature. Cut into 16 slices and serve. Garnish with candied ginger if desired.
