
Chocolate pastries with beans and avocado

1. Preheat the oven to 175 degrees with the rack in the center of the oven. Grease a baking pan with vegetable oil. Mix almonds, sugar, and salt in a food processor for about 2 minutes, until the almonds are finely ground. Add black beans and avocado.

2. Mix in a food processor until the mixture resembles mashed potatoes, about 4-5 minutes.

3. Place the chopped chocolate in a bowl set over a saucepan of boiling water. Stir until the chocolate melts, then remove from heat. In a separate bowl, whisk together cocoa, boiling water, vanilla extract, and espresso. Add the melted chocolate and baking powder, and mix in a food processor. Add the eggs and process for 30 seconds, stopping twice to scrape the batter from the sides of the bowl.

4. Pour the batter into the prepared pan and smooth the surface with a spatula. Bake for about 25 minutes, until a toothpick inserted into the center comes out clean. Let cool on a wire rack for at least 1 hour.
