Chocolate Sweet Potato Pastries

Description
Delicious baked treat for the whole family. Preheat the oven to 170 degrees. Grease a square baking pan with butter and set aside. In a medium saucepan, melt the butter over low heat. Remove the saucepan from the heat and stir in the cocoa. Let it cool slightly. Meanwhile, in a small bowl, mix together the flour, baking powder, and salt. Add the egg, sugar, and mashed potatoes. In another small bowl, mix together the vanilla and coffee, then add to the cocoa mixture. Add the cocoa mixture to the flour mixture and stir well. Pour into the prepared pan and smooth the top. Bake for about 20 minutes. Cool to room temperature before serving.
