This means preparing chocolate macaroons always requires advance planning. The actual preparation of this delicious dessert takes no more than an hour. Egg white, kept at room temperature for 28 hours, is whisked with sugar using a mixer until stiff peaks form.

Sift the almond flour and powdered sugar.

Sift the cocoa to avoid lumps.

Add the dry ingredients to the beaten egg whites and mix thoroughly. Thoroughly!

Transfer the chocolate macaron dough into a piping bag or into a regular plastic bag with a corner cut off.

Line a baking sheet with parchment paper. Shape the cookies into rounds.

Leave the baking sheet to stand at room temperature for about 20 minutes. Then bake in a preheated oven at 180 degrees for 13–20 minutes (depending on your oven).
