
Chocolate muffins with cream and cherries
Description
Perfect for serving with tea and coffee. Recipe for muffins with cocoa, root beer, whipped cream, vanilla ice cream, and maraschino cherries. Root beer is a carbonated beverage made from the bark of the sassafras tree.

1. Cut the butter into pieces. Preheat the oven to 175 degrees. Line a 22-cup muffin tin with paper liners. In a small saucepan, heat the beer, cocoa, and butter over medium heat until the butter melts. Add the sugar and whisk until completely dissolved. Remove from heat and let cool.

2. In a large bowl, mix together the flour, baking soda, and salt. In a small bowl, beat the eggs, then add the cooled cocoa mixture and stir to combine. Add this mixture to the flour mixture and stir until just combined. The batter will be slightly lumpy, which is normal. Do not overmix, or the dough will become tough.

3. Fill the paper liners in the pan with batter to about 2/3 - 3/4 of their volume.

4. Bake the muffins for about 17 minutes. Place on a wire rack to cool completely.

5. Whip the cream with powdered sugar using a mixer in a bowl. Add vanilla extract and mix. Using a special round spoon, make a small indentation in the center of each muffin and place a bit of ice cream into it.

6. Using a pastry bag, decorate the muffins with whipped cream, then place one cherry on each. Serve immediately. Store the muffins in the refrigerator.
