1. In a small bowl, mix the espresso powder with 3 tablespoons of boiling water until completely dissolved, then set aside. In a mixing bowl, beat the butter and sugar with an electric mixer at medium speed until creamy. Add vanilla extract and salt, and beat again. Reduce the speed. Add the egg, cocoa powder, and dissolved espresso. Gradually add the flour and mix until a smooth dough forms.

2. Wrap the dough in plastic wrap and refrigerate for about 30 minutes. Divide the dough into 24 equal parts. Roll each part into a ball, then shape the balls into long strips about 30 cm in length. Form each strip into a pretzel shape. Place the pretzels on a baking sheet lined with parchment paper, spacing them about 2.5 cm apart.

3. Preheat the oven to 160 degrees. Beat egg yolk with 1 teaspoon of water in a small bowl. Using a brush, coat the pretzels with the yolk mixture, then sprinkle with powdered sugar.
