
Chocolate Brownies
Description
Goes wonderfully with tea and coffee. Chocolate brownies are little chocolate cakes that are brown in colour—that’s how they got their name: “brownie” comes from English and means something like brownish. As far as I know, this little cake was invented in the USA sometime in the 19th century, but today it’s famous all around the world. Brownies pair especially well with coffee. In texture they’re somewhere between a cookie and a cake, though it’s hard to put into words—you really have to try them. Anyway, happy baking! :) Serve cooled or slightly warm.

Whisk 170 grams of butter with sugar until light and airy.

Add the lightly beaten egg to the mixture, continuing to beat the whole mixture.

Beat until light and airy. The mixture should be very airy—as in the photo.

Melt the chocolate in a double boiler (see the photo for reference).

Add the melted chocolate and vanilla essence to the mixture. Whisk until smooth and combined.

In another bowl, mix the flour, salt, baking powder, and nuts. The recipe specifies walnuts, but I only had these—it turned out no worse.

Mix the chocolate mixture with the flour.

Knead the dough from the resulting mixture and spread it evenly in a baking tin dusted with flour and lightly greased with butter. Bake for 45 minutes at 180 degrees.

Meanwhile, let's make the glaze—no less important a part of our dish. Put heavy cream into a small saucepan and bring it to a boil over low heat; remove from the heat and mix with chocolate chips (you can instead simply chop chocolate into pieces).

Mix until smooth and uniform.

Add the remaining 30 grams of butter to the glaze.

Beat thoroughly with an electric mixer until smooth and homogeneous.

Chill the glaze in the refrigerator for 10–15 minutes.

Take the finished cake out of the oven and spread it evenly with chocolate glaze.
