
Chocolate pancakes with cherries
Description
The baked dish is prepared simply and quickly. Such pancakes make a lovely breakfast, afternoon snack, or dinner for adults and children. Top them with icing sugar dusted over the top or drizzle with pouring chocolate if you like. Fresh cherries may be used instead, with the pits removed, but then the starch should be stirred into cold water—about 50 millilitres. Serve cooled or slightly warm.

Prepare all the necessary ingredients for making chocolate pancakes with cherries. If you are using frozen cherries, take them out of the freezer in advance and let them thaw slightly.

Pour sour milk into a bowl, add salt and sugar.

Crack an egg into a bowl and whisk well until smooth.

Mix the flour with the baking soda and sift into a bowl with the milk mixture. Sift the cocoa powder into the same bowl and beat everything until smooth. Let the batter rest for 15–20 minutes.

Pour, while stirring, boiling water and vegetable oil into the dough, and stir to combine.

Grease the pan with vegetable oil and heat over medium heat. Cook pancakes from the batter on it and let them cool slightly.

Drain the juice from the cherries into a bowl. Put the pitted berries in a pan, add sugar, and set over medium heat. Cook the cherries for 5–7 minutes.

Mix the cornstarch with the cherry juice and pour it over the berries, stirring constantly; simmer until thickened. This takes about 2–3 minutes, depending on heat.

Mix the cottage cheese with the sugar and blend everything with a blender until smooth.

Spread the cottage cheese mixture on one side of the crepes, arrange the cherries in a single row along the edge, roll into closed rolls, and serve.
