
Chocolate waffle cookies
Description
Perfect with tea and coffee. Melt chocolate with 1 cup of butter in a saucepan over medium heat, stirring constantly. Let it cool slightly. In a bowl, beat eggs, vanilla, and granulated sugar with an electric mixer at medium speed for 4 to 5 minutes. Add the chocolate mixture, salt, cinnamon, 1/2 cup cocoa powder, and flour. Preheat the waffle maker and lightly grease the surface. Place about 1 tablespoon of batter in the center of each waffle section. Close the lid and cook for about 1 1/2 minutes. Transfer to a wire rack, placing bottom side up. Let cool completely. Repeat with the remaining batter, greasing the waffle maker after each batch. Melt the remaining 2 tablespoons of butter in a small saucepan over low heat. Add powdered sugar and the remaining 2 tablespoons of cocoa powder, stirring until smooth. Add milk. Carefully spread the glaze over the top of each cookie. Let stand for about 10 minutes. Dust cookies with powdered sugar. Cookies can be stored in an airtight container at room temperature for up to 2 days.
