
Chocolate cookies with cinnamon and cloves
Description
The pastry is simple and quick to prepare. This recipe will yield about 50 pieces of aromatic cookies. Serve with tea or coffee.

1. Cut the butter into 10 pieces. Place the butter, sugar, and chopped chocolate into a 1-liter saucepan. Set the saucepan over low heat and heat, stirring occasionally, until the ingredients are completely melted. Beat the mixture with a mixer. Sift together the flour, cocoa, baking soda, salt, cinnamon, and cloves. Add the eggs to the chocolate mixture one at a time, beating with the mixer at low speed after each addition. Add the dry ingredients and beat with the mixer until the batter becomes smooth and glossy.

2. Place the dough on a work surface and divide it in half. Wrap each piece in plastic wrap and refrigerate for at least 1 hour or up to 3 days. Preheat the oven to 175 degrees. Line two baking sheets with parchment paper or silicone mats. Shape the dough into balls, using 1 tablespoon of dough for each. Place the balls onto the baking sheets about 2.5 cm apart. Slightly flatten the cookies with your fingertips.

3. Bake the cookies for 10–12 minutes, rotating the baking sheets and switching their positions halfway through the baking time. The cookies are done when they are cracked on top. Let the cookies cool on the baking sheets for 2 minutes, then carefully transfer them to a wire rack using a wide metal spatula. Cool to room temperature. Repeat with the remaining dough, allowing the baking sheets to cool between batches.
