
Chocolate cookies with coconut cream
Description
The recipe won’t take much time. To scoop the cookies onto the baking sheet, you don’t have to use a piping bag—you can use a parchment paper cone or a regular spoon. And don’t forget, before putting the baking sheet in the oven, to press each cookie lightly with your finger; otherwise they won’t have an even surface and you’ll end up with a little “tail” bump. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Prepare the cream. In a bowl, combine 1 egg and 1 tablespoon of sugar. Mix well.

In a separate bowl, mix 100 ml of milk and 1 tsp starch.

Add 1 tbsp coconut flakes to the egg–sugar mixture. Mix well.

Mix both parts and stir thoroughly. The cream is made in the microwave. Put it in the microwave and set the time to 2 min. 30 sec. Switch it on. After 30 seconds, take it out and stir. Repeat every 30 seconds. The cream thickens quickly, so you need to keep stirring it.

The finished cream holds its shape well.

Transfer the cream to a glass bowl and cover with cling film so that it rests directly on the surface of the cream. That prevents condensation from forming. Leave it to cool at room temperature.

Prepare the dough for cookies. Put soft butter into a bowl and add 150 grams of sugar. Beat with a mixer until smooth.

Add 1 egg and beat again with a mixer until the egg is fully incorporated into the mixture.

Add 50 ml of milk. Whisk.

Add flour, vanilla, salt, baking powder and cocoa.

Beat the dough at medium speed. Do not mix long. As soon as it is smooth and spreadable, stop beating.

Take a baking tray and line it with parchment paper. Using a piping bag without a tip, pipe the dough onto the sheet. Pipe the portions a short distance apart from each other.

With a finger moistened in water, lightly press the dough so the surface is even. Put the baking sheet with the unbaked cookies into an oven preheated to 180 °C for 8–10 minutes.

When the time is up, take the cookies out of the oven.

Remove the cookies from the baking sheet and let them cool.

Assemble the cookies. Take one sandwich base and spread about a teaspoon of chilled cream over it—not quite a full teaspoon. Cover with a second cookie. Press gently with your fingers so some cream appears at the sides.

Sprinkle the remaining coconut flakes onto a plate. Roll the sides of the cookies in the flakes.
