
Chocolate cookies with coffee filling
Description
Delicious baked treats for the whole family. A recipe for cookies with cocoa and a filling of cream, espresso, and chocolate. A glass of cold milk or a scoop of vanilla ice cream is the perfect accompaniment to these cookies. Serve cooled or slightly warm.

1. Make the cookie. In a medium bowl, mix cocoa powder, flour, baking powder, and salt.

2. In a large bowl, use a mixer to beat the sugar and butter. Add the eggs one at a time, beating well after each addition. Mix in the vanilla. Add half of the flour mixture and beat, then add the remaining flour and mix until smooth. Cover the bowl with a lid and refrigerate the dough for at least 4 hours.

3. Then, using a teaspoon, shape chilled dough into balls and roll them in powdered sugar.

4. Place the balls on a baking sheet lined with a silicone mat or parchment paper. Bake for 10-12 minutes. Let cool completely.

5. Prepare the filling. Bring the cream to a boil over medium heat. Mix in the espresso and remove from heat. Add margarine and chocolate, stirring with a rubber spatula until smooth. Mix in the vanilla. Cool the mixture for 10 minutes, then refrigerate for 30 minutes to an hour, until the filling reaches the desired consistency.

6. Spread the filling on the bottom half of the cookies, top with the remaining halves, and gently press to form sandwiches. If necessary, chill the cookies for 15-30 minutes.
