
Chocolate-Cheese Cake
Description
Delicious baked treat for the whole family. For the cake soak, I used apricot jam. I think it pairs perfectly with the other ingredients. This dessert is complex to prepare, as it involves making a sponge cake. Therefore, please be extremely attentive and strictly follow all the steps. Serve cooled or slightly warm.

Step 1

Let's start with the sponge cake. Carefully separate the egg whites from the yolks. Place the milk chocolate over a double boiler to melt. Beat the yolks with half of the sugar, then gradually pour in the chocolate mixed with rum. Add the flour blended with baking soda and cocoa to the mixture. Mix with a mixer.

We mix the egg whites, beaten to stiff peaks, with sugar and beat again. Then we combine the egg white mixture with the yolk mixture. Do not use a mixer; stir with a spatula.

Pour our sponge cake batter into a flour-dusted pan. Bake for 30 minutes at 180°C. DO NOT OPEN the oven door during baking.

We cut the cooled biscuit into thin layers (3-4 pieces). Brush each layer generously with our apricot syrup. Strawberry jam also works well. Don't skimp on the syrup to keep the biscuit moist.

Combine the cream cheese with the chocolate melted over a water bath. Mix the sour cream with powdered sugar and cinnamon using a spoon. Combine the sour cream mixture with the cheese without using a mixer, otherwise the cream will become too runny. Spread the cream between the cake layers, stacking them on top of each other, and on the sides of the cake.

I left a little chocolate for decoration. I grated it and sprinkled it over my cake. This is the wonderful result I got.
