Description

Homemade baked goods for tea. You can take this colourful pear Charlotte with you on a trip, to work, or to school as a snack if you make it in advance and let it cool. Properly whipped sponge batter does not need baking powder, so the pie turns out light and airy.

    Prepare the ingredients listed. You may use any variety of pears, but firm, fleshy ones are preferable to very juicy ones.

    Crack the chicken eggs into the bowl of a food processor or mixer, and add the sugar and salt to the same bowl. If you like, you can add vanilla sugar or ground cinnamon—the apple charlotte will be much more fragrant and delicious. Beat everything for about 3–4 minutes on the highest speed of the appliance.

    Add the cocoa powder and wheat flour to the whipped mixture. Carefully fold in the dry ingredients with a whisk or a silicone spatula — do not whip. There is no need to add baking powder!

    Wash the pears in water, cut each fruit into four parts and cut out the seed cores. Slice them. Grease a baking dish with vegetable or butter and preheat the oven to 180 degrees. Place the prepared chocolate batter into the dish and arrange the sliced pears on top. Put the dish into the oven.

    Bake for 25–30 minutes until golden brown, but do not open the oven door, or the cake may collapse because of the temperature shock. Once the Charlotte is baked through nicely, remove the pan from the oven and turn it on its side. Let it cool like that.
