
Squid cutlets

Prepare all the ingredients.

To easily and quickly clean squid, I recommend pouring boiling water over them. Then drain the hot water and cover the squid with cold water.

Thoroughly rinse the squid, clean them, remove the innards and the cartilage. Then cut off the fins on both sides and slice the squid open lengthwise. Remove any remaining internal parts, take off the membrane, and rinse once again. Cut the squid into rectangles. From one squid body, I get six ready pieces.

Pat the sliced squid dry with a paper towel. The pieces should be as dry as possible. Then add starch to the squid and mix well. Use 2 teaspoons of starch per squid body. Let it sit for 10 minutes.

Then add icy water, salt, and ground black pepper. Mix thoroughly and let the squid sit for another five minutes. After that, drain off all the liquid. Then you can proceed with frying.

Heat vegetable oil in a frying pan, and meanwhile, in a separate container, mix 2 tsp of starch and 2 tsp of flour. Dredge the squid pieces one by one.

Then dip into the beaten egg with salt.

And finally, coat the pieces in breadcrumbs.

Fry the squid in sufficient vegetable oil on medium heat on both sides until golden brown. Place the cooked cutlets first on a paper towel to remove excess oil, then transfer them to a plate.
