Mix the flour with pepper, beat the eggs in a separate container, and in another bowl combine the lemon zest, thyme, and breadcrumbs.

Dip the schnitzel in flour, then in egg, and finally coat in breadcrumbs. The mixture should evenly cover the entire surface of the schnitzel. Chill the prepared pieces in the refrigerator for 10 minutes.

Preheat the oven to 200 degrees. Place the schnitzels on a baking sheet lined with parchment paper. Bake the schnitzels for 20 minutes, lightly spraying their surface with oil. Serve the cooked schnitzels with fried vegetables. Oven-baked schnitzel is ready.
