Karađorđe's schnitzel

Description

Karadjordje's schnitzel in Serbia is something like our chicken Kiev — a classic of the genre and one of the signature dishes that national cuisine is famous for. The schnitzel is named after Serbia's national hero, Đorđe Petrović. He had nothing to do with schnitzel itself, but grateful Serbs simply decided to name one of their signature dishes after their national hero :)

    This schnitzel is very easy to prepare. Cut the pork into portion-sized thin pieces, and with a meat mallet, pound each thin piece into a very thin flat patty.

    On a thin slice of pork, place thin slices of bacon, then a layer of mozzarella, and on top of that - a piece of hard cheese.

    Roll everything up into a roll like this.

    Dip the roll in eggs beaten together with spices, then coat in breadcrumbs.

    Fry the cutlets over low heat until cooked through—about 20 minutes. Serve hot with your favorite side dish.
