
Cabbage schnitzel with onion dressing

Wash the cabbage, separate into leaves, and remove the top ones. Lower the remaining leaves into boiling salted water for 4 minutes, then immediately transfer them with a slotted spoon into a bowl of cold water. Leave for 1 minute. Place onto paper towels.

Peel the onion and slice into rings, coat in 2 tbsp of flour. Heat oil in a skillet and fry the onion for 2 minutes. Add sugar and soy sauce, mix well and cook for another 3 minutes. Remove from heat.

In a bowl, mix the breadcrumbs, remaining flour, and egg, and season with salt to taste. Coat each cabbage leaf in the resulting breading and fry in heated vegetable oil for 1.5 minutes on each side. Serve with onion dressing.
