
Eggplant schnitzel
Description

Wash the eggplants and place them on a plate. Prick them with a fork; otherwise, they will literally burst while cooking. Bake in the oven or, as I do, in the microwave. Cook the eggplants in the microwave on high power for 5-6 minutes.

Cool the eggplants and peel.

Cut each eggplant in half lengthwise. Season both sides with salt to taste.

Beat the egg as for an omelet and dip the eggplants into it.
