
Shkmeruli
Description
Traditionally, shkmeruli is prepared in a keci—a ceramic dish that is heated over hot coals and retains heat for a long time. What should you do if you don't have a keci or a suitable large skillet? You can roast the chicken on a grill or in the oven, which is exactly what I did. Here is the detailed recipe.

Prepare the ingredients. Wash the chicken and dry it with a paper towel. Cut the chicken along the breast, open it up, and lay it flat. Rub it with coarse salt, black pepper, and vegetable oil. Place the chicken on a baking sheet and, if possible, weigh it down with a press.

Pour 1/2 cup of water into a baking dish and place the chicken in it. Bake in a preheated oven at 190 °C until cooked through, approximately 1–1.5 hours.

Drain some of the rendered fat from the baking tray into a deep skillet. Peel the garlic and crush it in a mortar with salt. Add to the skillet. Let the chicken cool slightly, then cut it into portion-sized pieces.

Pour in the cream and bring to a boil. You can substitute the cream with milk; it will be just as tasty, but the sauce won't be as thick.

Add the chicken, mix, bring to a boil, and remove from heat.
