
Shima dish
Description
The recipe won't take much time. It's taken from an old book "Tajik Cuisine". Following the instructions precisely, I ended up with a very tasty and filling dish! Try it yourself! The ingredients are affordable and familiar to us, check out the recipe. Serve hot.

Prepare the ingredients. Let's get started!

Start with the dough: sift flour with salt into a bowl, add water, and knead a stiff dough.

Knead the dough thoroughly (for at least 10 minutes) until it becomes elastic, firm, and smooth. Let the finished dough rest, covered with a cloth or placed in a bag, for 30–40 minutes.

While the dough is resting, I prepared the meat. To do this, cut it into pieces weighing 20 g each.

Finely chop the onion.

Heat the oil well, add the meat, then the onion and tomato paste (or 2-3 tomatoes). Fry for 15 minutes. Then pour in a tablespoon of apple vinegar and a glass of water. Simmer until the liquid has evaporated.

Add chopped garlic and cilantro two minutes before the end. Stir and remove from heat. Kaila is ready!

Divide the rested dough into portions; I got 4 small balls. Roll each one out as thinly as possible, about 1 mm thick. Dust with flour during the process.

Dust the dough with flour, roll it into a tube, and cut it.

Bring water to a boil, add salt, and cook the noodles for literally a couple of minutes—they cook very quickly.

Finely chop boiled eggs with a knife, fry in 2-3 tablespoons of vegetable oil, salt, and add ground red pepper.

When all the ingredients are ready, assemble the shimu. Place the noodles in deep plates (you can additionally coat them with butter).

Pour the kailo noodles (meat with sauce).
