
Shilapalavi
Description
The recipe won't take much time. The traditional Georgian dish, Shilapalavi, is more similar to risotto and is made exclusively with short-grain rice that cooks soft and tender. The dish is simple to prepare, with quite flexible ingredient proportions and no strict time constraints. One essential requirement is a pot with a thick bottom. Shilapalavi is served both on weekdays and during celebrations. Serve hot.

Prepare the ingredients for making shilapalavi.

Remove the bones from the chicken. Cut the chicken fillet into pieces and place in a saucepan with a thick bottom.

Pour in the sunflower oil and fry the meat, stirring occasionally, for 7-8 minutes.

Peel and wash the onion and carrot, then chop them. Add to the pot with the chicken.

Pour 250-300 ml of water and simmer the chicken with onion and carrot for 15-20 minutes. Add salt, ground black pepper, dried basil, and turmeric.

Rinse the rice thoroughly and place it in a saucepan.

Pour hot water over the rice with chicken and vegetables, filling it to a finger's width above the rice.

Cover the pot with a lid and cook Shilapilav until done.
