
Korean-style Shiitake

Prepare all the ingredients.

Soak the dried shiitake mushrooms in warm water for 2–3 hours in advance. You can leave them overnight. After soaking, rinse the mushrooms, transfer them to a pot, and cover with clean water. Boil them in boiling water for 15–20 minutes.

Drain the mushrooms in a colander and squeeze them well. Cut into large slices.

Cut the onion into half-moons. Peel the carrots and grate them on a Korean-style carrot grater. Peel the garlic and press it through a garlic press.

Transfer the carrots to a deep bowl, add salt and sugar. Massage with your hands until the carrots release their juice.

Heat the vegetable oil over medium heat in a saucepan until wisps of smoke appear.

Add minced garlic, Korean-style carrot seasoning, and chili flakes to the center of the carrots. Pour hot oil over and mix.

Add the yellow onion and shiitake. Pour in the rice vinegar.

Mix everything. Let marinate for at least 2–3 hours, or preferably overnight.

Before serving, you can add fresh chopped herbs to the appetizer (scallions, cilantro, or parsley). Korean-style shiitake mushrooms are ready — enjoy your meal!
