Sweet bread
Description
This baked good is simple and quick to make. Traditional sweet breakfast rolls can be replaced with an eye-catching, very tasty “woolly” sweet bread. This bake is gaining popularity not only in Europe but worldwide. I’m sharing a step-by-step recipe—I hope you’ll enjoy this delicious bread too. Serve warm or chilled. Perfect with tea.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Pour off half of the warm milk as the recipe indicates, dissolve the yeast in it, and let it activate for 5 minutes.
- 3
Step 3

Mix the flour, salt, and sugar, crack in the egg, add the softened butter, and pour in the remaining milk.
- 4
Step 4

Pour in the yeast mixture.
- 5
Step 5

Using a mixer, knead the dough, mixing at medium speed for about 5 minutes.
- 6
Step 6

Gather the dough into a ball, cover it, and leave it to ferment for 1 hour.
- 7
Step 7

Divide the dough into 5 parts, shape into balls, cover with plastic wrap, and let rest for 15 minutes.
- 8
Step 8

Prepare a baking dish 20–23 cm in diameter. Line the bottom of the dish with parchment paper and grease it with vegetable oil or butter.
- 9
Step 9

Lightly dust the work surface with flour, then use a rolling pin to roll the ball of dough into an oval sheet. Place the filling on one half, cut the other half of the dough into thin strips, fold the edges toward the center, and roll it up into a log. Place it in the baking dish cut side down.
- 10
Step 10

Place all five pieces of dough into the pan, distributing them evenly around the circumference. Leave to proof for 1 hour. Before baking, brush with milk.
- 11
Step 11

Preheat the oven to 170 degrees. Bake for 20–30 minutes until done. You can check doneness with a toothpick. Remove the baked bread from the pan and cool on a wire rack to room temperature.
- 12
Step 12

In the end, this unusual “woolly” sweet bread turned out beautifully. Bread like this is a wonderful addition to breakfast or afternoon tea.
- 13
Step 13

As always, I'll show a cross-section of the bread. In flavor it resembles Easter kulich, since it contains almost the same ingredients. As for the filling, you can use any you prefer, including fresh berries.
