As you've probably noticed, the recipe for making shelpek includes only three ingredients, but despite this, shelpek cannot be considered a simple dish. It has a centuries-old, rich history, and the method of making these flatbreads has been passed down from generation to generation. Shelpek is traditionally prepared for major celebrations and always holds a place of honor on Kazakh family tables. Shelpek is a type of bread common in this region and has long been considered a symbol of the sun. Indeed, looking at these rosy golden flatbreads, one is reminded of warm, sunny days. Shelpek can be used in various ways: as bread served with soup, or to wrap fresh vegetables or fried meat—basically, anything you'd like. First of all, we need to knead the dough by combining all the ingredients. It should turn out thick and dense. Then let the dough rest for just 10 minutes.

Now divide the dough into 7-9 equal parts.

We roll out each piece into a very thin flatbread, about 2-3 millimeters thick.

For frying, we will need a pan with thick walls. Pour vegetable oil into it (about 1.5-2 centimeters) and heat it well. Place the pancake into the boiling oil and fry for about 3-4 seconds, rotating it in circles using a fork.

Then flip and fry for another 3-4 seconds in the same way.

Place the cooked flatbread on a paper towel. Repeat the same with all the remaining flatbreads. The shelpek are ready, enjoy your meal!
