
Shepherd's pie (vegetarian)
Description
The dish is prepared without unnecessary complications. Classic shepherd's pie features a tender and juicy meat filling topped with a thick layer of mashed potatoes, which turns golden when baked. Today I am sharing a recipe. The finished dish can be served at the table.

Prepare all the necessary ingredients. The ingredient list for a vegetarian shepherd's pie is not limited—you can also add other vegetables you like (for example, broccoli, cauliflower, etc.). Boil the peeled potatoes in advance, add a little milk, and mash them with a potato masher into a puree.

Finely chop the garlic and add it to the heated oil. As soon as the garlic begins to release its aroma, add the finely chopped onion. Cook for about 1 minute, just until the onion starts (only starts) to soften.

Then add chopped sweet pepper, thin carrot slices, and mushrooms cut into medium pieces to the frying pan.

Add the canned corn and chopped herbs to the same pan, season with salt, pepper, and thyme. Mix well, cover with a lid, and cook for 4–5 minutes. Then pour in the broth and add a little flour. Cover again and simmer over low heat for several minutes.

Our filling is ready. Transfer it to a baking dish.

Spread and smooth the mashed potatoes on top. Using a teaspoon, make attractive ridges to give the dish an original look. Place the pie in the oven for 25–30 minutes (temperature: 200 degrees).
