
Sorrel for winter
Description
A simple way to prepare ahead for storage. Preparing sorrel for winter at home is very easy. Sort through and wash the sorrel thoroughly. Coarsely chop the sorrel leaves and drop them into boiling water; as soon as it changes color, reduce the heat and skim off the foam that forms. Immediately pack the sorrel into sterilized jars. Store the product in the refrigerator or a cool pantry. Good luck. Store in a cool, dark place.

Carefully sort through the sorrel, removing damaged leaves. Then rinse under cold water.

Roughly chop the leaves.

Bring 2–3 liters of water to a boil in a pot and add the sorrel.

As soon as the sorrel changes color, immediately reduce the heat to a minimum. Skim off the foam with a slotted spoon.

Pack the sorrel into sterilized jars, adding a little of the liquid it was cooked in. Close the jars with lids and wait until it cools. Store the sorrel either in the refrigerator or in a cool, dark place.
