Chicken shawarma with pickled cucumbers

Description

Homemade shawarma is a versatile dish. You can put in it anything you have in the fridge. You only need a meat base—meat, chicken, or sausage—and everything else is optional: leftover fried potatoes, cucumbers, carrots, cabbage, any herbs. Some people even add boiled eggs to their shawarma! And it's delicious! Highly recommend trying it.

    Prepare all the necessary ingredients. For one serving of shawarma, I use 1 chicken thigh. You can use chicken breast or drumstick instead. Rub the chicken with salt and spices, then place it in the oven. Bake until fully cooked.

    Mix sour cream, mayonnaise, and mustard. Mix well. This is the sauce for shawarma. You can also add black pepper, garlic.

    The chicken has been baked, I previously removed the skin, separated the meat from the bone, and cut it into medium-sized pieces. In my opinion, it's not necessary to chop it too finely.

    Cut the pickled cucumber into thin strips or small cubes.

    Just like the cucumber, slice the tomato.

    Spread sauce on a sheet of lavash, leaving about 3 cm from the edges. Place tomato, chicken, and cucumber on top. Finely chop the onion and add it on top. If you don't like raw onion, you can marinate it beforehand in a vinegar solution. Optionally, you can also add herbs, sautéed or marinated mushrooms, or canned corn.

    First fold the top edge, then the sides, and then roll up the lavash with the filling like a tube.

    Lightly brown the shawarma in a dry skillet. It's best to grill it on a grill pan or electric grill, but a regular skillet will work too.
