Description

The essence of this oven-baked shashlik recipe in a cooking bag is that the meat is first simmered and then roasted, developing an appetizing crust similar to shashlik grilled over charcoal. We thoroughly wash the meat, dry it, and cut into not very large pieces (about the size of a walnut). Place the pieces tightly together onto a skewer, and generously sprinkle with coarse salt and pepper. The skewer should be small enough to fit easily in the oven.

Preheat the oven to 170 degrees. Place the skewers into a roasting bag and seal it tightly. The skewers should not touch each other. Cook the meat for about 10 minutes. During this time, the meat should turn evenly white.

Then open the sleeve and remove the skewers. Set the oven to grill mode and place the skewers with meat on the topmost rack, arranged as shown in the photo. The tray beneath the skewers should be black. Cook the meat for 10 to 20 minutes (depending on the oven), turning the skewers several times, until the meat develops an appetizing crust.

Then transfer the meat to a plate and serve. It should be served with bacon and a slice of lemon. Fresh vegetables, herbs, or a vegetable salad dressed with lemon juice and olive oil make the best side dishes.
