We thoroughly wash the meat and dry it with a paper towel.

Now, a very important point! Cut the meat. The pieces should be neither too large nor too small. But it's better to make them a bit larger. Small pieces will shrink during frying, and the shashlik will be spoiled.

Slice the onion into rings and half-rings.

Place the meat and onion into a convenient container. Season well with salt and pepper. Mix everything together with your hands. Knead and press the meat for 5-7 minutes.

Then add vinegar or lemon, and pour pomegranate juice over the meat. The juice should completely cover each piece; if there's not enough juice, add more. Once again, thoroughly press everything down with your hands, cover with a lid, and refrigerate overnight.
