Wash the meat, dry it with paper towels, and cut into small pieces, about 3-4 cm each. 2. For this shashlik, it's best to use coarse salt. If you have sea salt, that's perfect. Season the meat with salt and add ground pepper. Dried herbs won't hurt, but you can do without them. 3. Mix well so that the salt and pepper are evenly distributed. 4. You can start threading the beef pieces onto skewers once the salt has "dissolved," about 20-30 minutes later. You may also add small pieces of pork fat between the beef chunks. 5.
