
Carp skewers
Description
The recipe won't take much time. For the shashlik, choose the central part of the fish—this section has more flesh and fewer small bones. Be sure to remove the fins—they will burn over the fire or in the oven. It's best to use a sour cream or garlic marinade without oil, as the fish is quite fatty. You can marinate the catfish pieces in the marinade overnight in the refrigerator, but avoid onion or garlic marinades, as they will begin to turn bitter after 4–5 hours. Serve hot.

Prepare the listed ingredients. Buy a catfish or a portion of fish, preferably the central part, without head and tail.

Wash the catfish portion in water, remove the innards, cut it in half along the backbone, and cut out the backbone itself, leaving the flesh. Then trim off the fins, remove any remaining bones if present. Rinse once more, pat dry with a paper towel, and cut into portion-sized pieces.

Peel a medium onion, rinse it, and slice into rings. Add to the container with the sliced fish.

Add sour cream of any fat content, salt, and ground black pepper to the same mixture. If desired, you can enhance the sauce with other spices and seasonings, but avoid coarse ones, as they may burn over heat. Mix everything well and let the fish marinate in the sauce for 1–2 hours. If you decide to marinate longer, place it in the refrigerator, but no more than 4–5 hours—otherwise the onion will start to turn bitter.

After the specified time, alternately thread the pieces of fish and onion rings onto skewers, then coat everything with the remaining sauce.

Heat the coals in a barbecue or grill until they produce good, but not intense heat. Place the skewers on the grill grate and cook for 7-8 minutes on each side. Depending on the size of the fish pieces, larger ones may require slightly more cooking time.

Place the hot catfish shashlik onto plates, removing it from the skewers with a fork. Slice fresh vegetables and serve them with various sauces, bread, etc. If desired, you can drizzle the shashlik with lemon or lime juice. Enjoy your meal!
