
Fish skewers
Description
The dish is prepared without unnecessary complications. Shashlik is a delicate matter. And shashlik made from fish, especially on skewers and cooked in a regular oven, is particularly challenging. However, by following this recipe, you'll be able to make delicious fish shashlik on skewers in the oven—simple and straightforward! ;) The result is a very tasty, light dish with low cost. The finished dish can be served right away.

Clean and gut the fish (almost any firm-fleshed fish will work, but I prefer mackerel and catfish). Rinse it, remove the skin, separate the head, tail, backbone, and ribs, then cut the flesh into portion-sized pieces.

Squeeze the juice from the lemon.

Mix the juice with soy sauce, sugar, and spices. Those who prefer saltier flavors can add salt, but it's generally not necessary since we're using soy sauce.

Mix the fish with the marinade. Refrigerate for 1-2 hours.

Rinse the skewers under running water (in this case, there's no need to soak them, since the shashlik will not be cooked over coals, so they won't burn, but you can play it safe if you prefer).

Thread the pieces of fish onto skewers (you can alternate them with tomatoes, onions, bell peppers, and even olives) and place on a rack in a preheated oven (if your oven has a "Grill" setting, be sure to use it!). After 5 minutes, turn the skewers over to the other side.

This shashlik takes only 10-15 minutes to prepare, so don't miss the timing! As soon as the fish pieces develop a golden crust, remove them and serve immediately with chilled white wine and a fresh salad.
