
Sturgeon shashlik
Description
The recipe won't take much time. Fish kebabs cook significantly faster than meat ones. Sturgeon is fattier than many other fish varieties, so it's preferable to grill it—it turns out juicy and is less likely to dry out. Serve this kebab with grilled roasted vegetables or potatoes. Serve hot.

Rinse the fish, then remove the entrails, fins, and scales.

Remove the skin from the carcass by quickly scalding it with boiling water, then immediately rinsing it with cold water. This will make it easy to separate from the bones.

Separate the carcass from the skeleton, cut the fillet into 3 cm pieces.

Mix all the marinade ingredients in a bowl and add the fish, stirring well.

Place the fish in marinade in the refrigerator for 1 hour, covered with a lid.
