
Beaver shashlik
Description
If you have friends who are hunters or you happened to get beaver meat, use it to make delicious shashlik. When prepared according to this recipe, beaver meat turns out tender, aromatic, and juicy. The recipe is simple, but the dish will take longer to prepare than you might hope. The meat needs to be soaked and then marinated. But that won't stop you, will it? Let's get cooking

Cut the meat into pieces, cover with cold water, and soak for 24 hours. Then drain the water and rinse the meat once again.

Wash the fresh herbs and chop them.

Peel and chop the onion (into cubes or half-rings, as you prefer). Slice the chili pepper into thin rings.

Place the chopped herbs, onion, and pepper into a bowl. Add salt, ground pepper, and coriander. Mix everything together, pressing down so that the herbs and onion release their juice.

Add all of this to the meat and pour over water mixed with vinegar. The liquid should completely cover the meat. Cover the meat with a plate and place a weight on top. Refrigerate for at least 12 hours.
