
Lamb kebabs in the oven
Description
We will prepare lamb shashlik in the oven. Cut the meat and a piece of fat into small pieces. Marinate them in a mixture of grated onion, lemon juice, and spices for an hour and a half. Then thread the meat and fat onto bamboo skewers and place them on a rack in a preheated oven at 250 degrees. Place a foil-lined baking sheet with several pieces of fat under the rack. Bake until done, flipping once the meat begins to brown. Serve with fresh herbs and shashlik sauce.

Remove all tendons and membranes from the meat.

Cut the lamb and fat into small pieces.

Place the meat and fat into a bowl, then grate two onions on top.

Next, add spices to the meat – salt, red pepper, cumin, ground coriander, turmeric, and the juice of one lemon. Mix well and let it marinate for one to one and a half hours.

Thread the pieces of meat onto bamboo skewers, alternating them with pieces of fatback.

Line a baking sheet with foil and place several pieces of bacon on it. Put it in the oven.

Place the rack on top and arrange the meat sticks on it. By this time, the oven should already be preheated to 250 degrees. After a few minutes, when the meat begins to brown, turn it over and continue roasting until done. As soon as the fat on the foil starts to smoke, immediately remove the baking sheet from the oven. By this point, the meat should be fully cooked as well.
