Description
The baking is simple and quick. You can use any apple variety to make this fluffy apple and cottage cheese charlotte. If the apples are rather tart, add a bit more granulated sugar to the batter, and vice versa. The dessert turns out especially delicious with the addition of vanilla sugar or ground cinnamon—the incredible aroma will fill your kitchen and draw everyone, family and friends, right to the table. Serve with tea or coffee.

Prepare the listed ingredients. Wash the apples in water and dry them thoroughly.

Beat the chicken eggs into a deep container or the bowl of a food processor, add salt and granulated sugar. At this stage, you can also add vanilla sugar or a few pinches of ground cinnamon. Beat everything for 3–4 minutes until fluffy. The main thing is not to overbeat—do not exceed this time to avoid over-whipping the eggs.

Add the cottage cheese of any fat content, crumbled by hand, to the mixture and mix well.

Add the baking powder and premium wheat flour in parts. Incorporate them into the mixture without whisking. The dough should end up not too thick, with a consistency similar to pancake batter.

Grease or spray a baking pan with vegetable oil, making sure to coat the sides as well. Place the dough into the pan and smooth it out. Cut the apples into quarters and remove the cores. Slice them and arrange on top of the dough. You can also cut them into medium-sized cubes—your preference.

Preheat the oven to 180 degrees and place the baking pan on the middle rack. Bake the cake for about 35–40 minutes, checking for doneness with a wooden skewer—it should come out dry from the center of the batter. After baking, turn the pan with the cake onto its side and let it cool.
