Apple Sharlotka with Kefir and Sour Cream

Description

Home baking for tea. The fluffiness of your apple charlotte depends a great deal on how well you beat the eggs with a mixer, so do not skip this step and beat them for at least two minutes. I used juicy sweet-tart apples, so I used what I felt was the right amount of sugar; judge by your apple variety and add less or more sugar accordingly.

    Prepare all ingredients before you start cooking. Wash the apples thoroughly.

    In a large bowl, combine the eggs and sugar.

    Using a mixer, beat these ingredients until light and fluffy. Beat for about 2–3 minutes so the mixture really becomes fluffy.

    Add the kefir, sour cream, and vegetable oil. Mix these ingredients until the mixture is smooth and uniform.

    Sift all the flour and add the baking soda.

    Whisk all these ingredients together until you get a smooth batter with a consistency similar to sour cream.

    Peel the apples, remove the seeds, and dice the flesh into small cubes.

    For baking, a silicone pan is very convenient: you do not need to grease it or line it with baking parchment. Spread half of the batter on the bottom of the pan, then spread two thirds of the apple cubes on top. Next, spread the remaining batter on top and arrange the remaining apples over it. Bake the charlotte in an oven preheated to 180°C for 40–45 minutes.
