
Apple and cherry charlotte
Description
The baking is simple and quick. For me, charlotte is truly a summer pie, made with fresh, aromatic apples (just picked from the tree). But you can also make this pie with frozen fruits and berries (and even with oranges, pineapple, and kiwi)! In any case, it turns out very, very tasty. But today I'll tell you about it. Can be served with tea or coffee.

Prepare all the necessary ingredients. Cut the apples into small slices, place them in a bowl, and sprinkle with lemon juice. Rinse the cherries and remove the pits. You can optionally mix the cherries with sugar, but I chose not to, as I prefer a tart flavor in the pie.

First, start preparing the dough. Separate the egg whites from the yolks and place them into separate clean and absolutely dry bowls. First, beat the egg whites with half of the sugar until stiff peaks form. Add sugar mixed with vanilla sugar to the yolks, and beat until the mixture lightens in color and increases in volume.

Then add the sifted flour to the yolks in 3-4 batches and mix with a spoon or spatula.

Now add the beaten egg whites to the dough and mix the mass. You should get a beautiful, homogeneous dough.

Line the baking pan (I used a 26 cm diameter pan) with parchment paper. Arrange the apple slices and cherries evenly in a single layer on the bottom.

Pour the batter on top. Bake in an oven preheated to 170 degrees for 25 minutes.

Check the readiness of the pie with a wooden skewer or a matchstick. Simply insert the matchstick into the center of the pie. If the matchstick comes out dry, the pie is ready.

Let the finished cake cool slightly. Then, run a dessert knife around the edge of the pan to easily release the cake. Invert the cake onto a plate so that the fruit filling is on top and the dough is on the bottom. Dust the top with powdered sugar and garnish with mint.
