
Cherry Charlotte Cake with Kefir

Homemade tea-time pastry. All cooks know that charlotte is a quick and delicious sponge cake pie. You can add various fruits or berries to the batter. Contrary to the classic method, I suggest making charlotte with kefir and using cherries instead of traditional apples. If you decide to make it outside of summer, frozen berries will be waiting their turn in the freezer. Let’s make charlotte with them. You’ll also be pleasantly surprised by how simple and easy it is to prepare. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for making charlotte.

Pour sugar into a bowl and crack the eggs.

Whisk until fluffy foam forms and pour in the kefir.

Add the melted butter.

Add the baking soda and flour.

Knead a uniform, smooth batter, with a consistency like thick pancake batter.

Place the dough in a baking pan. Spread the pitted cherries on top of the dough.

Bake the charlotte in an oven preheated to 175–180°C for 40–45 minutes. The baking time depends on your oven.

Remove the finished cherry charlotte made with kefir from the pan, let it cool, slice it, and serve.
